Giò heo và thịt chân giò đem nướng than hoa cho vàng. Nướng xong đem móng giò rửa sạch, chặt miếng vừa ăn Thịt chân giò thái miếng dày, hơi to 1 chút.
Ướp giò heo với hành tỏi băm nhỏ, nước mắm, đường, bột ngọt, tiêu và chút muối.
Ướp thịt với chỗ nước hàng, 1 miếng quế nhỏ, 4 thìa café mắm tôm, 2 thìa café đường, 1 thìa café bột canh, 1/3 bát con mẻ, riềng, sả ít nhất 30 phút.
Sau khi xào thịt xong cho vào nồi, thêm chút nước xăm xắp mặt rồi hầm đến khi thịt chín mềm.
Đổ nước dừa vào ngập giò heo, đun nhỏ lửa tới khi gần cạn nước thì nêm nếm lại cho vừa miệng, thêm 1-2 quả ớt vào đun cùng, tới khi nồi giò heo cạn nước hoàn toàn là được.
